From the biodynamically farmed La Capitaine plot in Arbois, this cuvée blends 70% Pinot Noir, 25% Poulsard, and 5% Trousseau. The grapes are hand-harvested and fully destemmed, with a three-week maceration and gentle pump-overs using native yeasts. Aged for 18 months in large oak foudres, then bottled with a light silica clay filtration. This is a deeply expressive red Jura wine with both freshness and structure.
