A fascinating Jura blend of Savagnin, which spends some time under “flor” (i.e., a layer of yeast that forms over the top of some wines and brings out intriguing flavors), and Chardonnay that’s done in a more Burgundian style (in Jura you would say it's "ouillé"). The resulting wine highlights the strengths of each component, while forming something totally singular. This bottle is rich, nutty, spiced like curry… yet also bright, fresh, with a spine of minerality. Drink while eating like a 19th-century French aristocrat: sweetbreads, liver paté, duck breast. Also sublime alongside virtually any cheese.
