As said by the winemaker, Alejandro Muchada, "Univers is the entrance to our 'Universe,' fresh, saline and elegant; pure Palomino grape." and we agree! This wine was produced in a vin claire style, whole cluster, direct press in a Champagne Press. Ages on the lees for 9 months in ceramic. Very unique wine!
